Apple Cake

2 cups sugar
2 eggs
1 cup vegetable or canola oil
2 1/2 cup flour
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
4 cups sliced apples
1 cup nuts (optional)
1 cup butterscotch morsels (optional)

Mix sugar, eggs and oil. Mix dry ingredients in a separate bowl and then add to mixture. Batter will be stiff. Fold in apples and nuts. Put in 9" x 12" or 9" x 13" pan. Sprinkle butterscotch morsels on top. Bake at 350 degrees for 50 minutes.

Note: My favorite combination is to skip the nuts but add the butterscotch morsels. I've mixed them directly into the batter before and just saved a few to sprinkle on top.
