Pasta Roll-Up with Spinach and Cheese

1 lb. Lasagna noodles
1 lb. ricotta
1 1/2 cup grated Parmesan cheese
3 pkg. frozen chopped spinach (cooked and drained throughly) OR can substitute meat
salt and pepper
Marinara Sauce or Alfredo Sauce OR a combo of both

Preheat oven to 350. Prepare lasagna according to package directions, cooking slightly less. Mix spinach, ricotta, Parmesan cheese, salt and pepper. Place a few dollops of sauce on the bottom of a 9 x 13 baking dish. Spread each noodle thinly with spinach mixture, roll noodles and place seam side down into the baking dish. Top with sauce and cheese. Bake in the oven for 30 to 40 minutes.

Freezer option:
Do not add sauce. Can store for up to 3 months.
