Angel Food Cake

Rose has become an expert at making Angel Food cakes. Eat with fruit on top or try some of the other delicious recipes that call for Angel Food cake.

Ingredients
1 1/2 c. sugar, divided
1 c. cake flour
1 1/2 c. egg whites (11 - 12)
1 1/2 tsp. cream of tartar
1/2 tsp. salt
1 tsp. almond flavor

Sift together 3/4 cup sugar and the flour 3 times; set aside. Beat egg whites until frothy, then add salt and cream of tartar. Beat until it stands in peaks. Add 3/4 cup sugar gradually, about 3 tablespoons at a time, beating well each time after adding sugar. Lightly fold in the sugar-flour mixture, adding 1/2 cup at a time. Add flavoring. Bake at 375 degrees for 35 - 40 minutes. For Cherry Cake: Grind (about 2/3 cup) small jar of maraschino cherries. Fold into cake and bake.
