Krazy Mixed-Up Pancakes

These were a Sunday morning favorite. And for the rest of the day, crazy behavior was justified - of course you could be crazy if you ate crazy pancakes for breakfast!


Place 9x13 inch glass baking dish in 425⁰ oven until it is hot. Add 1 stick of butter and let it melt (watch so it doesn’t burn)

Meanwhile, mix together


1 cup flour

1 cup milk

4 eggs

1 tsp. vanilla

Whip together and pour into hot baking dish. Bake for 22 minutes at 425⁰. While pancake is baking, heat one large can of pie filling in a saucepan. When pancake is done, fill with hot pie filling. Cut in squares to serve. Serves 4-6.

Variation: Substitute hot pancake syrup for hot pie filling.
