Cheesecake

1 lb. cottage cheese
1 lb. cream cheese
1 pt. sour cream
4 eggs
1 1/2 cup sugar
3 T. cornstarch
3 T. flour
juice of 1 lemon
1 t. vanilla
1/4 lb. shortening, melted

Put cottage cheese through sieve (if smooth texture desired). Grease 9"x13" pan. Mix cheese and sour cream. Then add other ingredients in order listed. Pour into pan and bake at 350 for 45 minutes. Increase heat to 375 and cook 15 more minutes. Do not open oven door during baking. Turn off oven and leave cake in for 1 hour. Then loosen sides of pan and let stand another 1/2 hour. The cake will form it's own crust.

Note: This recipe can be halved.
