Jell-O Poke Cake

One year, Jell-O, Baker's Chocolate and Pepperidge Farm gave out a little cookbook pamphlet at the grocery store and it included this recipe. I remember being at Grandma's the first time she made it. Grandpa seemed a little skeptical, but it was delicious and has been made several times since. As we know from the different color combinations we've seen, you can use any flavor of gelatin.

2 baked 9-inch round white cake layers, cooled
2 cups boiling water
1 package (4-serving size) Jell-O gelatin, any red flavor
1 package (4-serving size) Jell-O gelatin, lime flavor
1 tub (12 oz.) Cool Whip Whipped Topping, thawed

Place layers, top sides up, in 2 (9-inch) round cake pans. Pierce cake with large fork at 1/2-inch intervals.

Stir 1 cup boiling water into each flavor of the gelatin in separate bowls 2 minutes or until dissolved. Carefully pour red gelatin over 1 cake layer and lime gelatin over second cake layer. Refrigerate 3 hours.

Dip 1 pan in warm water 10 seconds; unmold onto serving plate. Spread with 1 cup of the whipped topping. Unmold second layer; carefully place on first layer. Frost with remaining whipped topping. Garnish as desired.

Refrigerate: 1 hour or until ready to serve. Makes 12 servings.

Holiday Tip: Dip fresh cranberries or grapes into water; roll in sugar to coat well. Let stand on wax paper until dry. Use with fresh mint to garnish cakes, gelatin salads and the holiday turkey platter.
