Fruit Pizza

This is a favorite at the Ramsey house. This was also a great take-along when we would visit Grandpa and Grandma to go swimming at the farm.


Glaze: Make first

2 Tbls. Corn starch

1 cup fruit juice


Crust:

1 cup butter-softened

1/2 cup sugar

2 ¾ cup flour

1/4 tsp. salt

1 tsp. baking soda


Filling:

2 Tbls. Fruit juice (from canned fruit)

8oz. cream cheese, softened

1/2 cup sugar


Topping:

1 can mandarin oranges, save juice

1 cup crushed pineapples, save juice

2 small bananas

Strawberries, Blueberries, grapes, peaches, kiwi, etc.


Mix 1 cup fruit juice and 2Tbls. corn starch in sauce pan over medium heat until thickened. Cool to room temperature about 30 minutes.


Mix together butter, sugar, flour, salt, and baking soda. Press dough into greased cookie sheet or two 12 in pizza pans. Bake 375 for 10min or until light golden brown. Mix together fruit juice, cream cheese and 1/2 cup sugar, spread on cooled crust. Layer canned and fresh fruit on top or cream cheese. Make into a pretty design. Brush glaze over fruit layer. Store in the refrigerate.
