Onion Casserole

5 large sweet onions (such as Vidalia)
1 stick butter
1 sleeve (or 1 c.) Ritz crackers, crushed
1 c. Parmesan cheese

Slice onions. On the stovetop in a skillet, melt butter; add onion and saute for 15 minutes. In a 1 1/2 quart casserole dish, add half of the onions. Top with 1/2 cup of the Parmesan cheese and 1/2 cup of the Ritz crackers. Add the rest of the onions; top with 1/2 cup of Parmesan cheese and 1/2 cup of Ritz crackers. Bake covered at 325 degrees for 30 minutes.
