Thumbprint Cookies

These are Connie's favorite. She usually has a stash in her freezer.

1 c. brown sugar
1 c. shortening
1 c. butter or margarine, softened
4 eggs, separated
2 tsp. vanilla
4 c. flour
1 tsp. salt
Jelly or icing

Heat over to 350 degrees. Mix brown sugar, shortening, butter, egg yolks and vanilla; mix in flour and salt. Shape dough into 1-inch balls. Beat egg whites slightly. Dip each ball into egg white, roll in nuts. Place 1 inch apart on ungreased cookie sheet, press thumb deeply in center of each. Bake until light brown, 8 to 9 minutes. Immediately remove from sheet. Cool. Fill with jelly or icing. I use mixture of confectioners' sugar and water.
