Chicken Roll-ups

This is a delicious and easy dish that you can make ahead. You'll find it in the Queen of Peace cookbook submitted by Christy.

3 cups chicken, cooked and deboned
1 1/2 cups grated cheddar cheese, divided
2 rolls of crescent roll dough
2 cans cream of chicken soup or mushroom soup
milk

Tear chicken into bite-sized pieces. Combine chicken and 1 cup of the grated cheddar cheese in bowl, mixing well. Open up crescent roll dough, separating the triangles. One at a time, place about 2 T. of the chicken/cheese mixture onto a triangle. Roll up into crescent roll and place in a greased pan. You will be able to fit about 8 of these into a regular-sized cake pan. (This recipe makes two pans - one for tonight's dinner and one for the freezer.) There will be some chicken/cheese mixture left, so just dribble this leftover mixture between the roll-ups. Mix two cans of soup with 3/4 c. of milk per can into a bowl and blend well. Pour this on top of the crescents. Sprinkle remaining cheese on top of that. Bake at 375 degrees for 15 - 20 minutes or until crescent rolls are done and cheese is melted.
