Jay's iHop Pancakes

Jay and I love pancakes. Jay had this recipe taped inside the cabinet door at his apartment. It's now a Saturday morning treat.

(Makes 8 to 10 pancakes.)

1 1/4 c. all-purpose flour
1/4 c. granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
pinch of salt
1 egg
1 1/4 c. buttermilk
1/4 c. cooking oil

Procedure:
Preheat skillet over medium heat. (Use a pan with a nonstick surface or apply a little nonstick spray.)

In a blender, or with a mixer:
combine all ingredients until smooth. Pour the batter by spoonfuls into the hot skillet. Cook each side evenly, and enjoy!
