Pumpkin Cookies

My Xavier roommate used to make these all the time and never shared the recipe because it was a family secret – well secrets out – I got the recipe!

1 cup shortening
1 cup sugar
1 egg
1 cup pumpkin
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 tsp. vanilla

Mix all ingredients together and drop by teaspoon full on cookie sheet. Bake at 350 degrees for 10-12 minutes. Let cookies cool and spread with icing.

Icing:
2 Tbsp. Butter/margarine
4 Tbsp. Milk
½ cup brown sugar

Boil for 3 minutes and let cool. Then add: 1 cup powdered sugar 1 tsp vanilla Drop onto cookies.
