Zucchini Bread

3 eggs
2 cups sugar
1 cup oil
1 t. vanilla
3 cups flour (sifted)
1 t. cinnamon
1 t. salt
1 t. soda
1/4 t. baking powder
2 cups zucchini (grated)
1 cup nuts (chopped)

Beat eggs until foamy. Add sugar, oil, and vanilla. Mix well. Then add the flour sifted with the cinnamon, salt, soda, and baking powder. Add zucchini and mix well. Stir in nuts. Pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour.
